Since arriving at the estate in 2008, Raphaël Saint-Cyr, representing the fourth generation of winemakers in his family, has continuously worked to develop and grow his parent's estate: conversion to organic agriculture, single vineyard cuvées aged on fine lees for extended time (6 to 18 months), wild yeasts, finely-tuned extraction - a far cry from the Beaujolais primeurs. As part of the new, dynamic and ambitious generation of winemakers in the region, Raphaël strives above all else to make his Beaujolais wines the most authentic representation of their famous pierres dorées (golden stones) terroir. His cuvées are elegant and superbly refined, the fruit structure is balanced and the body is soft and lush. The biodynamic approach is on mind. Raphaël is meticulous about his vines, and his wife Karine is eager to support him in this transition. A great winemaker in the making, one to discover without hesitation.

葡萄园位于山坡上, 介于夏布利 Chablis和 Tonnerre之间, Fleys是一小乡村出产著名的1ers Crus "Vaucoupin", "Mont de Milieu"和 "Les Fourneaux"第一佳酿, Corinne Grossot太太不停地整理这多石块崎岖的葡萄园. 与她的丈夫Jean-Pierre和女儿Eve一齐生产, 精心酿造高质量葡萄酒. Grossot家族拥有18公顷葡萄园, 自从1920年开始是夏布利chablisien地区最有品位的葡萄酒产户. 20年来十分重视环境保护, 细心护理葡萄树, 10 年以来渐渐转种植有机葡萄树, 用葡萄枯枝作暖气燃料...! 酒窖里, 设备是现代化的, 拥有双底层葡萄收集桶, 电动葡萄果选择桌, 2个气压挤压机. 挤压出的果汁用重力法收集, 自动温控发酵缸. 葡萄酒分处于两个酒库里: 一个用于发酵酿造年份酒, 另一个作陈酿年份酒. 陈酿时间是9-18个月. 夏布利Chablis酒随后投放市场"由顾客评分", 陈酿酒的橡木桶使用量是精打细算的 (最多30%), 尽量使到葡萄酒表达出它的芬香果香味和矿物味, 优美的夏布利chablisien酒.

在美丽的比利牛斯山 Pyrénées Orientales东部, 面对地中海, 在芬香的格里歌树和阳光普照下的葡萄园间, 朗格多克的Ferrals les Corbières农村里. domaine Ledogar葡萄酒庄的历史. 是 3代人的葡萄农, Ledogar家族拥有22公顷土地, 葡萄种种类很多而且树龄古老 (介于 60至 120岁). 葡萄园围绕在乡村外围, 在著名的Boutenac土壤上, 葡萄农在某些区块上从事生理治疗有机种植和有机动力种植. 在1998年葡萄农脱离农村合作社而开始酿造自己第一桶酒, Xavier Ledogar先生继承前人. 多得他的弟弟 Mathieu合作, 在 Corbières 生产自己"纯种酒". 今天Ledogar 兄弟已经找到自己的产业方式, 有优质的葡萄, 阳光和清新的空气. 他们是 "Changer l'Aude地区创新酒"会员, 这对年青而有活力的葡萄农酿造自己有特色性的葡萄酒. 有工艺人的勇气, 是 Corbières法定产区的明日之星.

 

 

Pithon, a name that resonates loud and clear in the Loire ! At the origin of the story is the charismatic winemaker Jo Pithon who, with his wife Isabelle, wanted in 2008 to prepare the transition of their estate to their children. The vineyards, encompassing 22 acres, lie on top of an Armorican range of hills with exceptionally rich soils made up of rolled galets and crushed stones, as well as igneous rock. The famous cuvée from the COTEAU DES TREILLES is a jewel of purity and refinement. The vines in question, planted before World War Two, had been abandoned due to the steep incline of the slope, up to 70% in some areas. In 1998, the Pithon family took on the challenge of purchasing 70 separate single vineyards from 25 different sellers to reclaim the lands and plant 8 acres of vines. Located in a Natura 2000 site (regionally protected natural reserve), environmentally respectful agriculture was essential to preserve the natural fauna and flora of such an incomparable site.
Since the fall of 2018, Ivan Massonnat has taken over the estate with very much the same mentality. He recently purchased almost 40 extra acres of vineyards in the Savennières and Quarts de Chaume AOPs, thus reinforcing the estate’s notoriety in terms of Chenin Blanc. Throughout the winemaking process, the wines are meant to be a natural expression of the exceptional terroir, with single vineyard cuvées such as Bonnes Blanches, Clos des Ruchères or l’Ecart. The wines are made using only wild yeasts, and are left to evolve naturally in small to medium sized barriques for long periods of time (one to two years). Sampling the estate's wines is the guaranteed equivalent of a great Loire valley voyage !

Vincent Caillé先生, 在1986年重掌葡萄园,  他是新一代的葡萄农, 决定找出另一发展道路, 是以优质产品为重. 满心充满热情, 他酿造的Muscadet Sèvre 和 Maine酒极有表达性. 拥有不同种类土壤 (片麻岩, 辉长岩和火成片麻岩), 他耕耘土地同时用自然植草法. 在1996年"有机种植", 葡萄树丰盛地生长, 周围还出现野郁金香, 这植物种过去由于化学种植而消失了. At the entrance of the Gorges Bagorèse, on the right bank of the Argens, an enchanting turquoise blue reflections river overhung by beautiful steep cliffs, is Correns, a village in the Provence countryside, outside the national roads. A few miles away is located the Domaine des Aspras that tells a beautiful story about the meeting between a family and a terroir : 50 years ago, Gottfried and Lisa Latz left the Belgian Congo, landed in the south of France and settled in Correns in Provence where they discovered their passion about wine. The family shortly bought some parcels of vines and during many years sold the grapes to the negoce. In 1971, when Michael Latz, agricultural engineer by training, joined his widowed mom for help, the first bottles are marketed and Domaine des Aspras is born.
Aspras honors this exceptional terroir with secular fame, whose Benedictine monks of Montmajour had already acknowledged the unique wine growing potential in the 13th century. The limestone hills that surround the area gave it its name "asper" - (aspera, rockery in Latin).
This land is cultivated in organic farming, to 95 % today. An initiative of Mayor Michael Latz , who gathered the habitants of Correns in early 1995. Today, the village of Correns is the 1st ORGANIC village of France, distinguished by its preserved quality of life and also by its environmentally friendly agriculture.
The Domaine des Aspras takes the Latz family's motto : "Know thyself" (te ipsum nosce). The work of their soil and in their cellar is guided by the determination to product organic wines with a true reflection of its exceptional .

In the village of Trespoux-Rassiels, Mas del Perié culminates Cahors vineyards from it height of 320m above sea level. When Fabien Jouves arrived in the estate in 2006, this young winegrower intends to move the lines of the historical appellation of Cahorsto express greshness and finesse with the purity of the fruit of the Malbec grape. With ambition and tenacity, he begins a long process of anlyse of the soils, conversion to biodynamic faming, long agings on lies in barrel and now amphora. Today, Fabien Jouves is a winegrower who knows exactly his terroir and the whispers of his vineyard. Always listening to its plots cuvees, it became one of the best references of the Cahors appellation. Still passionated and player, Fabien Jouves produces some recreational cuvees, more confidential, from old grapes that he wants to preserve. The pleasure is guaranteed !

香槟Champagne/Domaine Collard-Picard酒庄

是两家香槟葡萄农的故事, 一家位于Côte des Blancs坡地, 另一家位于vallée de la Marne谷地. 幸福的婚姻结合, Caroline Picard和 Olivier Collard. 继承了4代葡萄农, 他们在2006年到Villers sous Chatillon乡村里买了一个葡萄园, Olivier就在这乡村里长大. 他们来到这乡村是雄心勃勃的, 首先将传统方法和现代技术结合. 挤压机从酒缸分开, 酒缸是自动温控, 酒帽可以缓慢下放和冷冻浸泡, 不进行乳酸发酵, 但陈酿时间很长, 在大橡木桶内两年. 在灌装前塞上软木塞, 糖浆是以葡萄果汁为原料. 葡萄园严格种植管理. The founders of the Maddam brewery are two cousins, Alexis and Vianney Madelin, both of whom grew up in Burgundy. Alexis had previously worked in the vineyards in Châteauneuf du Pape, in Australia and then in Chablis for many years, while Vianney, after completing his woodworking studies, turned towards artistic design and creation for famous Champagne houses and renowned distilleries. Driven by a determination to offer high quality, artisanal French beers, and by a desire to return to their native lands, in 2016 the two cousins decided to renew the Burgundian brewing tradition in a land where wine is king, in the very heart of Chablis! Their beers are modern, 100% artisanal and organic. They are brewed with various, hand-selected types of barley, all of which are grown in Burgundy, and using patiently elaborated and jealously guarded recipes inspired by refined and generous gastronomical brews. Maddam beers are all-natural, non-filtered and non-pasteurized, created by a unique brewing method of 60 days (fermentation in steel vats between 68 to 78 degrees Fahrenheit, bottling with a light addition of sugar and yeast, second fermentation at 77 degrees Fahrenheit lasting two weeks, labeling and ageing in bottle for two weeks before release). The finely crafted Maddam beers stand out from other French beers due a delicate head, their fine bubbles and their smooth and finely balanced texture on the palate
