Fabien Jouves Estate, Cahors - Organic Wine of Southwest - BIOtiful wines

In the village of Trespoux-Rassiels, Mas del Perié culminates Cahors vineyards from it height of 320m above sea level.

When Fabien Jouves arrived in the estate in 2006, this young winegrower intended to move the lines of the historical appellation of Cahors to express greshness and finesse with the purity of the fruit of the Malbec grape.

With ambition and tenacity, he began a long process of analysis of the soils, conversion to biodynamic faming, long ageings on lees in barrel and now amphora.

Today, Fabien Jouves is a winegrower who knows exactly his terroir and the whispers of his vineyard. Eager to rediscover the biodiversity of yesteryear, he strives for mixed farming with the planting of truffle oaks, lavender, beehives, old orchards and the breeding of free-range black pigs (Tessou farm). On a plot located next to his gravity-fed winemaking cellar, he has created a conservatory of indigenous grape varieties (cahours, négral, baral, valdigué pissaire, magdeleine noire, mérille, grand noir de la calmette, gibert, noual, malpé, jurançon....)

Always listening to his plot's cuvees, he has became one of the best references of the Cahors appellation.

Still passionated and outgoing, Fabien Jouves produces some recreational cuvees, more confidential, from old grapes that he wants to preserve. The pleasure is guaranteed !

Family estate since 5 generations

Location : Trespoux-Rassiels (Lot), altitude 350m

Area : 27 hectares on kimeridgian soils from Jurrassic

Use of the vineyard : organic farming (écocert 2009) and biodynamic farming (demeter 2011/biodyvin 2014)

Grapes : Malbec, merlot, tannat, chenin blanc, jurançon noir, cabernet franc, petit et gros manseng, marsanne, roussanne, cinsault, valdiuie, gilbert et noual


Vinifications : indigeous yeasts, natural fermentation with no intrants, ageing in amphoras, egg, barrels, inox andconcrete tanks, light sulphiting at bottling
